Don’t be afraid to ask the fishmonger for a sniff before purchasing any seafood. Sea scallops, big and sweet, should smell briny, not fishy. Once you’ve gotten them home, keep them in the coldest part of the fridge and use them within a day. The orange juice becomes slightly syrupy when reduced, and the parsley and basil give heft and great flavor to the sauce. If you can’t find sea scallops, look for large bay scallops or swap in thick chunks of firm, white-fleshed fish such as grouper or snapper.
